Sundaesauruses are a major part of Papa Louie 3’s enemy group.
They are connected directly to the game’s story, with Radley Madish using captured chefs as part of his plan to create more of them.

Flipline’s official description explains that Radley Madish and Luau LePunch use Warp Coins to take Papa Louie and the restaurant customers into Munchmore, where the captives become part of Radley’s Sundaesaurus operation.

I would not risk a good run for every difficult coin on the first visit.

The adventure contains two major boss fights.
Boss encounters work differently from normal stages because simply moving toward the exit is no longer the main objective.
You need to watch attack patterns and work out when it is safe to respond.
I found the same principle useful here as with ordinary enemies: attacking at every possible moment is usually less reliable than waiting for a clean opening.
Learning the pattern first saves more attempts than trying to force damage quickly.
Choosing The Right Character Matters
By the middle of the game, character choice starts becoming more important.
A familiar character may feel comfortable, but another rescued customer might have a skill better suited to the challenge you are attempting.
My approach is to separate character choice into two questions:
Which character am I most comfortable controlling?
Which character has the skill this level actually needs?
